Cheesy Chestnut Potatoes
l lb. Chestnuts
1-2lb. Bag of frozen southern style hash browns
1 large onion-chopped
1 can cream of chicken soup
1 stick butter, sliced
8 oz. Velveeta cheese, cubed
8 oz. Sour cream
Ground pepper to taste
Optional: Shredded Cheddar Cheese
Remove chestnuts from shell. Microwave can be used for easy removal from shell. Chop chestnuts. Mix chopped chestnuts with all remaining ingredients.
Prepare 9 x 13 baking pan with cooking spray. Place mixture in baking pan. Smooth out top. Garnish chestnut potatoes with parsley.
Bake in oven at 350 or until top is slightly brown. This dish can be prepared in advance and baked before serving.
