Chestnut Stir Fry
1 pound Chestnuts
1 medium onion, chopped
1 celery stalk, chopped
3 cups fresh or frozen vegetables suitable for stir frying (broccoli, carrots, snow peas, cabbage, etc.)
2 tbs. Cooking oil
1 cup chicken broth
2 tsp. corn starch
1 tsp. soy sauce
Remove chestnuts from the shell and slice. Place oil in wok and add sliced chestnuts. Saute chestnuts, chopped onion and chopped celery for 3-5 minutes. Add remaining vegetables.
Saute chestnuts and vegetable mixture for about 5 minutes. Add soy sauce.
Thoroughly mix chicken broth and corn starch in cup. Add chicken broth mixture to wok. Cook slightly until sauce thickens.
Serve over cooked brown or white rice.
